Ingredients
2 T olive oil
2 cloves garlic, minced
1/2 yellow onion, diced
1/4 cup chopped nuts, such as walnuts or pecans
1 lb collards or other greens
1-2 T balsamic vinegar
1/4 c raisins or dried cranberries
Salt & Pepper, to taste
- Remove stems and cores of greens and coarsely chop.
- Heat olive oil in frying pan over medium-high heat.
- Add garlic and onion and cook until onion is translucent, about 5 minutes.
- Add nuts and let cook for 2 minutes
- Stir in greens, lower heat to medium, and cover. Cook until greens are wilted.
- Stir in balsamic vinegar and raisins/cranberries. Taste and add salt and/or pepper, as desired.
- Serve immediately.
